3 restaurants earn low marks for health violations

KNOXVILLE, Tenn. (WATE) - Three restaurants required reinspection this week after netting violations that require follow-ups. 

The first low score was a 75 at Carolina Ale House at 9045 Kingston Pike. Anything below a 70 is failing, but the inspector noted a few violations.

First the dishwasher wasn't sanitizing the dishes and utensils properly because the water wasn't hot enough. Water entering the dishwasher must be at least 120 degrees and not more than 150 degrees to prevent damage to the dishes.

There were also food temperature violations. Chicken was being held at 56 degrees and salmon at 50. To slow bacteria growth, the proper cool temperature for food is 41 and below. 

The inspector also noted there were no date marks on some open milk and cut lettuce. Date marks are required so there is no guessing about the quality of food after seven days of being open.

Carolina Ale House was reinspected and the grade was upgraded to a 95.

On Parkside Drive in Turkey Creek, Mimi's Cafe scored an 81. The inspector found the temperature of warm food was a problem: turkey at 125 degrees wasn't warm enough. The proper temperature is 135 degrees.

When the inspector checked the food slicer, he found it was dirty and hadn't been sanitized. Also, there were no towels at the kitchen handsink; they're required for the staff.

Mimi's Cafe has also been reinspected. The original grade of 81 was upgraded to a 96.

The next lowest grade was an 82 at Lempira Mexican Restaurant at 8078 Kingston Pike.

While that is a passing grade, the inspector found a roach crawling on the kitchen floor. The manager was ordered to call a pest control company to zap it.

Food was also found stored on the floor -- it belongs on the shelves. And raw chicken was stored over ready-to-eat food in the refrigerator. You may do that at home, but it's against the rules in restaurants because of the possibility of cross-contamination. Juices from the raw food could spill onto the cooked food.

Lempira Mexican has also been checked again. The new grade is a 96.
