Problems found, corrected at Bearden fine dining restaurant

KNOXVILLE, Tenn. (WATE) - A local fine dining restaurant scored a low health inspection grade, however, the inspector recently returned to follow up.

Echo Bistro, 5803 Kingston Pike - Original Grade: 82, Follow-up Grade: 97

The restaurant scored a number of risk factor violations - health practices that could possibly contribute to food borne illness if not corrected, but they have been.

The inspector wrote he found cheese and other produce in the cooler at 68 degrees. The food was thrown away because 41 and below is the safe temperature to slow the growth of bacteria.

Also in the fridge, the inspector found moldy produce, like creamy cheese and fruit.

The inspector noted no date marking system in place for ready to eat food at Echo Bistro. For food that's been opened and kept in the refrigerator, date marks are required and the food must be used within seven days. That's so there's no guessing as to the freshness of the food you're served.

The inspector found fruit flies near the dishwasher and when he checked the dishwasher, the inspector wrote it had no sanitizer running through it. A service tech was called to check the dishwasher.

Echo Bistro was re-inspected and the critical violations were corrected.
