Blackberry Ice Cream


1 Quart

Heavy Whipping Cream
1 1/4 to 11/2 cups Powdered Sugar
1 1/2 package Gelatin
2 tbsp. Cherry Flavoring or 1/4 cup Cherry Brandy (liqueur)
1 tbsp. Vanilla Extract
1 cup Fresh Blackberries or mixed berries

Whip heavy cream, powdered sugar and gelatin until semi-fluffy. Add flavorings and whip until peaks. Do not whip too long (it will curdle). Fold in berries, freeze for minimum of 4 hours.
