KNOXVILLE (WATE) - An eatery in downtown Knoxville's popular Market Square received a failing grade in the most recent health inspections.

If a restaurant scores enough critical health violations, they're worth four and five points, and then accumulates a bunch of two-point violations, a health score goes south quickly.

The Knox County Health Department considers a grade below 70 as unsanitary.

Lowest Score:

31 Bistro at 31 Market Square - Grade: 60

To begin with, the inspector found shrimp thawing in a hand sink. That's the wrong place because bacteria can grow rapidly at room temperature. To prevent the spread of bacteria, food is supposed to thaw in the refrigerator, where the temperature is 41 and below.

An employee washed a knife in a hand sink. Again, that's the wrong place. Utensils are supposed to be washed, rinsed and sanitized, which can't be done at a hand sink.

A server didn't wash his hands when handling dishes.

An employee drink was open and stored next to equipment.

Chemicals were found improperly stored and food temperatures were off.

31 Bistro was re-inspected. The new score is an 83.

Recently we've seen many restaurants with grades in the 90s. The average health inspection grade ranges between 82 and 85.
