NASHVILLE (AP) - Two new distilleries planned for Giles County plan to produce the kind of Tennessee sippin' whiskey made famous by Jack Daniel.
The Tennessee Spirits Co. and the Tenn South Distillery will use the so-called Lincoln County Process, filtering the just-distilled corn-barley-malt product through sugar maple charcoal before putting it into oak barrels. The process is designed to give the whiskey a smooth taste and distinctive color.
The Tennessean reports The Tennessee Spirits Co. plans a large operation that will have a capacity to produce 5 million cases of whiskey each year and to distribute it worldwide.
Meanwhile, the Tenn South Distillery will be a smaller, boutique-style company with limited production runs.
Both of the new Giles distilleries hope to become tourist destinations featured on the Tennessee Whiskey Trail.
