Ingredients:
1 1/2 Tbs butter
1/2 cup sliced Portabello mushrooms
2 oz. Smoked Artesburg cheese (diced)
1/2 cup Italian Bread crumbs
Salt and Pepper to taste
1/4 to 1/2 cup water or Vegetable Stock
1 Tbs fresh thyme (pull leaves)
Preparation:
Saute mushrooms in butter, salt and pepper for 4 minutes. Add thyme then water or stock and cook for 3 minutes more. Remove from heat and add breadcrumbs then cheese and mix all ingredients together.
Stuff chops and bake at 350 degrees for 20 minutes.
Option: soak a small bunch of fresh whole thyme in wine or water, then 1/2 way through the baking process place the fresh thyme on top of the chops.
Sauce for Chops Ingredients:
1 Tbs butter
1/4 cabernet wine
1/2 cup heavy cream
Salt and pepper to taste
1 tsp saute dust
Preparation:
Melt butter, add wine and reduce by 1/3, then add cream and spices and reduce by 1/3. To serve, pour sauce over cooked pork chops.
