KNOXVILLE (WATE) - On the outside, The Cheesecake Factory at West Town Mall looks all ready to go, but a sign says the restaurant is closed for training.
Staff waited on one another Wednesday to practice. For server Olivia Morrell, it was a jury of her peers. She talked about the menu, went through the process of getting her order in the system, and made sure the food was out on time.
"I was super-nervous being judged by people I knew. But they've been wonderful," she said.
Olivia and others were under the watch of 55 trainers from across the country.
"They'll be here upwards of four to six weeks. So the hope is when you dine with us here in Knoxville, it'll be flawless and wonderful, as if the restaurant had been open for years," said Alethea Rowe, Los Angeles-based senior director of public relations.
Management says they've been working towards the Knoxville opening for a while.
"We have gotten requests to come to the Knoxville community for years," she added.
Olivia says she can't wait for opening day to get here.
"You really want to go ahead and dive in. You want to start being an actual server," Olivia said.
The restaurant's grand opening is Tuesday, but before that the staff will be serving meals to 1,500 locals as part of their training.
