KNOXVILLE (WATE) - Food temperature, bugs and poor employee hygiene sank the health inspection grades for three area restaurants.

Dazzo's Pizzeria, 710 S. Gay Street - Grade: 67

A grade below 70 is considered unsanitary.    

When the inspector checked the temperature of pizza, the thermometer read 130 degrees, but 140 and above is required.

The temperature of food in the reach-in cooler was off too. Some cheeses and dressing were at 55 degrees, but 41 and below is the correct safe temperature.

The inspector also found a dirty, soiled rag on the counter were pizza was being prepared.

Also, no soap or towels were found at a hand sink. Both are required so employees can properly wash their hands.

Little Caesars, 7535 Chapman Highway - Grade: 68

Here the inspector found pre-made pizzas that had been left out too long and the food temperatures were off.

Proper employee hygiene, hand washing, was not being followed.

When the inspector checked one of the employee bathrooms, it was dirty.

Genghis Grill, 11316 Parkside Drive - Grade: 69

Fruit flies and other small bugs were found in the kitchen.

In the walk-in cooler, moldy lemons were found, and they were thrown out.

The inspector writes the temperature of white rice was 117, but that temperature is way off. The required temperature to slow the growth of bacteria is 140. The report says the manager immediately threw the rice away.
