RouXbarb in West Knoxville closing; owner going to Copper Cellar

KNOXVILLE (WATE) - RouXbarb restaurant in West Knoxville will be closing on New Year's Eve, as its owner and head chef moves on to a position as corporate chef for the Copper Cellar family of restaurants.

In a release from Copper Cellar, Chef Bruce Bogartz says his restaurant at 130 Northshore Drive will close on December 31. Employees were notified and Bogartz is working to find new jobs for them.

Bogartz will assume his new position with Copper Cellar on January 2 and will serve as corporate chef for Calhoun's, Copper Cellar, Smoky Mountain Brewery, Chesapeake's and Cherokee Grill Steakhouse.

"This is an amazing opportunity," Bogartz said. "I'll get to apply the creative approach that people loved at RouXbarb to a larger, well-established brand with multiple locations. It's the kind of opportunity a chef dreams about."

Bogartz asked customers in September for donations to keep RouXbarb open. Bogartz said he needed $25,000 to $40,000 to keep running. He also said he has struggled to make ends meet for the last year and admitted he had not been the best businessman.
