Chicken Vinaigrette Stuffed Portabella

2 Whole Portabello mushrooms (Rubbed with olive oil)
3/4 cup diced or cubed chicken breast (steamed or boiled)
1/4 cup chopped red onion
20 slices of Mandarin oranges
1 tbs chopped Parsley
3 Tbs Honey
2 Tbs Balsamic vinegar
2 Tbs Olive oil
Salt and Pepper to taste
1/4 tsp dry Rosemary leaves

Bake Mushrooms for 3-5 minutes at 350 degrees. Blend all other ingredients in bowl, let set for 1/2 hour. Serve on the warm mushrooms.
