Italian Potato Salad

8-10 new red potatoes or 4 large white potatoes
1/2 cup Olive oil
1 tbs Red Wine vinegar
1 tbs dried parsley (or 2 tbs if fresh)
1 tbs dried basil (or 2 tbs if fresh)
1 tbs fresh garlic
1 tbs saute dust
salt and pepper to taste

Cool and dice boiled potatoes (in skins). Combine other ingredients (add oil and vinegar slowly) in a large bowl. Salt and pepper to taste.

Serves 4-6
