KNOXVILLE (WATE) - A dirty kitchen and food temperatures sunk the health inspection score for a Knoxville area restaurant this week.

The manager at the lowest scoring restaurant was told to thrown away two pounds of crab meat because the temperature was way off and possible could have made customers sick.

China Wok Buffet, 5453 Washington Pike - Grade: 68

A score below 70 is considered unsanitary.

When the inspector checked the temperature of crab, it was 58 degrees. However, 41 and below is the proper holding temperature to prevent the spread of bacteria.

When the inspector checked the sanitizer bucket, it had no sanitizer in it, and water in the bucket used to clean tables was dirty.

At restaurants you have likely watched workers clean tables with a cloth. That cloth or rag comes from a sanitizer bucket that is supposed to have clean water in it, and of course sanitizer.

The inspector also noted that the dishwasher at China Wok didn't have enough sanitizer running though it and needs to be repaired.

Finally, the inspector writes knives used to cut food were not properly cleaned, and the cutting board, on which meats and vegetables are cut, was dirty.

Reinspection: Wasabi Japanese, 118 Major Reynolds Place - Grade: 64 82

A few weeks ago, Wasabi Japanese in Bearden scored a 64. It's been re-inspected and the new grade is an 82.
