Leek and Portabella (Shitake) Ginger Soup

1 leek stalk
coarsley chopped 1/2 lb shitake or portabella mushrooms
sliced 2 tsp dry ginger (or fresh)
1/2 pound chopped carrots
1 tbs butter
2 tbs olive oil
1 tsp fresh garlic
minced 1 tsp shallots
minced 2 tsp thyme
minced 2 tsp dry parsley
chopped or double if fresh 1/2 red or sweet onion, Julienne style
1/2 red and 1/2 yellow bell peppers
Julienne style 8 to 10 cups vegetable stock
2 tbs saute' dust
salt and pepper to taste

Heat all ingredients except saute' dust and salt and pepper, in a pan. Bring this mixture to a boil on high heat for about 15 to 20 minutes. Turn down heat to medium for another 25 minutes making cooking time 45 minutes total. Turn off the heat and let sit for one hour. This allows all the juices to exude and give a full flavor. After it sits, add salt, pepper and saute' dust to taste and serve.
