Cheese Crepes with Pomodoro Cream Sauce

Ingredients:
6-8 crepes (serves 2 - 4)
1 egg
1/4 cup flour
2 tbs to 1/4 cup whole milk or half and half
pinch of salt

Preparation:
Whisk all ingredients in a bowl. Use a 6 inch non-stick or butter pan, and make thin pancakes.

 

Cheese mixture Ingredients:
8 ounces Ricotta cheese
1/4 cup Parmigiano cheese
1/4 cup bread crumbs (seasoned)
1 egg
1 tbs saute' dust
1/2 tbs Basil
salt and pepper to taste

Preparation:
Mix all ingredients in a bowl, use 3-4 tbs in a crepe and roll. Place the crepe in the oven at 350 for 4-7 minutes. Serve with sauce.

 

Sauce Ingredients:
1/4 cup pureed Roma tomatoes
1/2 cup heavy cream
1 tbs saute' dust
1 tbs basil and oregano
salt and pepper to taste

Cook purreed tomatoes for 5 minutes. Add herbs and spices and cook for 3 minutes. Add cream and reduce.
