KNOXVILLE (WATE) - Buying meat can be confusing. There are different grades, different cuts and even additives to consider.

At Willy's Butcher Shop in West Knoxville, Samantha Carithers and her husband William hope to take away the confusion.

"This butcher shop is an old world butcher shop, which means we have a full service butchery. We break down all of our animals that we get from home source meat sources. And William can do anything for you because he's a master butcher," said Samantha.

William Carithers has been butchering for over 15 years. To show his knowledge, he showed us how to break down a pig.

We sawed, and we cut, and with each piece, William kept up a running dialogue of what we were doing.

"William is always here. He's a master butcher and he can prepare meats and anything else you may need for your food right there on the spot," said Samantha.

Willy's has been around for about a year now. The couple says they have a pretty loyal customer base, which they attribute to quality products and one-on-one service.

"Butchery is a lost art. I mean one thing we're missing from what we used to have back in the day was that personal relationship," said William.

From the meats that come into their store, to the 60 different kinds of sausages William makes in house, to the aging room, filled with prime cuts of meat, to the rub William puts on his bacon, this butcher shop is about making the customer happy.

That's especially true for his steaks.

"When you come to Willy's, I have a guarantee if it's not the best steak you've had every time, I'll cut you another one or give you your money back. And as long as I've been doing this in Knoxville, which is quite a while, I can say I've never had to give any money back," said William.
