KNOXVILLE (WATE) - For the first time in many months, there are no health inspection grades below 80. As we have reported, inspectors are spending less time checking the little things, like improper lighting, faulty ventilation, or dirty walls and more time on bigger issues.

For instance, they're paying close attention to food temperatures making sure it is either hot enough or cold enough. They're watching kitchen workers more closely for proper handwashing and hygiene.

Also being closely monitored is the proper sanitation of pots, pans, dishes and utensils.

Plus, inspectors are doing a lot of teaching, making sure restaurant management and staff know the health rules.
