Currant Berry Vinaigrette

1/2 cup currant berry conserve
1/4 cup red wine vinegar
2 cups Balsamic vinegar
1 1/2 cups olive oil
1 tbsp onion, minced
1 tbsp shallots, minced
1/2 tsp salt
2 tbsp honey
1 tbsp parsley, minced

Whisk all ingredients together adding vinegars 1/4 cup at a time to taste. Add berry conserve last and serve reserved berries on salad.
