Chef Jock's Shepherd's Pie

2 pounds ground turkey (lean)
6 large peeled potatoes (for whipped potatoes)
12 ounce corn and peas (frozen or fresh)
salt and pepper
3 tbsp granulated onion
1 tbsp coarse black pepper
1 tbsp thyme
2 tbsp grill dust
1/2 pound butter
1/2 cup diced red onions

Saute turkey and onions together in 3 tbsp of butter, 2 tbsp grill dust , and salt and pepper to taste.

Make mashed potatoes with 1/4 pound butter, granulated onion, salt and pepper to taste, add thyme (if needed, use whole milk or half and half.).

Saute' corn and peas in the remaining butter with coarse black papper and salt. Layer meat, corn and peas, then whipped potatoes, bake at 350 degrees for 15 minutes.
