Roasted Rack of Pork with Pear Sauce

2 racks of pork
1 tbsp saute' dust
1 tbsp grill dust
1 tsp coarse black pepper
1/4 cup pear honey or pear preserves
3 tbsp molasses
1/2 cup red wine (dry) or beef stock/broth
2 tbsp softened butter
salt and pepper to taste
1 tbsp olive oil

Rub saute' and grill dusts and 1 tbsp of butter all over the pork rack. Sear in hot olive oil for 1 minute on each side, then place in the oven at 375 degrees for 20 minutes (approximately).

Sauce Preparation:
Melt 1 tbsp butter in a pan, add molasses, honey and red wine. Salt and pepper to taste and reduce by 15%.
