Fried Calamari with Chef Jock's Seasonings

1 pound calamari bodies (sliced in circles)
1/2 pound of tentacle (left alone)
Peanut oil
2 tbsp butter
1 tbsp saute' dust
1 tbsp grill dust
1 1/2 cup italian blend bread crumbs
1/2 cup ap flour
salt and pepper to taste


Egg Wash Ingredients:
2 eggs
2 cups whole milk
whisk this mixture together.

Fill the pan with 2 inches of Peanut oil and 2 tbsp butter. (Heat to 275 to 300 degrees). Make the egg wash. Blend the breadcrumbs and flour in a bowl. Dip calamari in egg wash, the roll in crumb/flour mixture. Keep the calamari separated and drop into the hot oil. Fry until lightly brown: approximately 3-5 minutes. Place in paper towel and sprinkle seasonings on calamari and serve.
