Chef Jock's Breakfast Napoleon

3 slices french bread (1/4 inch to 1/2 inch thick)
toast the bread and spread with 1 tbs butter
1 Italian sausage patty, fried
1 egg, fried hard
1 slice Provolone cheese
Roma tomato, sliced

Layer ingredients on a plate as follows:

  • toasted bread
  • tomato
  • toasted bread
  • egg
  • provolone cheese
  • tomato
  • sausage
  • toasted bread

Sauce Ingredients:
1/4 cup mayonnaise
1/4 cup sour cream
salt and pepper to taste

Whip together, 1 tbs chopped scallops, mayonnaise and sour cream, salt and pepper, 1 tbs granulated onions. Serve as a sandwich spread or dip the sandwich into it.
