Ingredients: 1/2 green, 1/2 yellow and 1/2 red bell peppers, chopped 1/2 red onion, sliced 2 tbs Olive oil 1/2 tbs Garlic (optional) salt and pepper to taste
Preparation: In a saute' pan, heat oil, add peppers and onions. Saute' just until the vegetables are about to wilt, but still bright in color. Slice in half, the bread of your choice and add the sauteed ingredients.
*Suggestions for bread are a good Italian or a hard loaf bread.
*These vegetables are also great served over rice, Chinese noodles or a hearty pasta.
