Grouper:Talapia Fra Diavolo

2-6 to 8 ounce Talapia (Grouper) filets
1 cup mixed bell peppers, sliced
1/2 cup red onion, sliced
1/2 tbs red pepper flakes or desired fresh hot peppers
2 tbs butter
1 tbs saute' dust
1 tbs grill dust
1 tbs cracked black pepper
Peanut oil

Sauce Preparation:
In a saute' pan, saute' the peppers, onions, hot pepper, saute' dust, grill dust and black pepper in the butter. Saute' these ingredients just until the veggies are bright and crisp, not soggy. When the desired tenderness is reached, add 1/2 cup heavy cream and reduce by 1/3. Add salt and pepper to taste.

EggWash Ingredients and Preparation:
1 large egg
3/4 cup half and half or whole milk
Mix together, then dip the fish in this mixture

Crumb Ingredients and Preparation:
3/4 cup Italian bread crumbs
1/4 cup flour
Mix together, then cover battered fish into crumbs.

Final Preparation:
Batter the fish in the egg mixture, then cover with crumb mixture. Deep fry in the hot oil until desired doneness. Serve with the sauce over top the fish.
