Ingredients 10 ounces of Lobster meat or Scampo Lobster 1 tbs saute' dust 1 tsp coarse black pepper 8 9 x 7" sheets of Phyllo dough 4 ounces melted butter
Preparation Combine saute' dust , feta cheese and pepper in a bowl. Roll wet lobster in seasonings. Brush melted butter on each Phyllo sheet, 4 sheets per serving. Place seasoned lobster in the center of 4 stacked sheets of Phyllo dough. Roll like a burrito or make a sachet. Bake at 350 for 10-12 minutes or until golden brown. Serve with sauce over the top.
Sauce Ingredients and Preparation 1 tsp butter 1/4 cup yellow roasted pepper puree salt and pepper to taste 1 tbs parsley, finely chopped 1/4 cup heavy cream 1 ounce feta cheese
Melt butter, add pepper puree, salt and pepper to taste. Add parsley and cream and reduce by 1/4. Sauce should be velvety when finished. Crumble feta cheese on top of final dish.
