Ingredients: 3 tbs. Olive or Canola oil 1/2 cup minced green pepper 1/2 cup minced shallots 1/2 cup minced onion 2 cups seasoned bread crumbs, plus some for breading 2 eggs 2 tbs. Cajun seasoning 1 lb. lump crab meat
Preparation: Saute green pepper, shallots and onion in 1 tbs Olive or Canola oil until soft. Remove from heat and put in a mixing bowl. Add crabmeat, breadcrumbs, eggs and Cajun seasoning. Mix well and form into patties. Bread the patties in some breadcrumbs. Heat 2 tbs. Olive oil and fry patties until golden brown on both sides. Serve with remoulade sauce.
