Fried Baby Shrimp with Tossed Greens

Ingredients and Instructions for Shrimp:
12 ounces baby shrimp
egg wash
1 cup bread crumbs
1/4 cup flour
1 1/2 cups peanut oil or vegetable oil for deep frying

Blend flour and crumbs together. Place shrimp in the egg wash, then in to the bread crumbs. Deep fry until done, a golden brown color.

 

Ingredients and Instructions for Salad:
Your choice of greens for 2 salads
1/4 cup thinly sliced red onions
1/4 cup diced cucumber
salad dressing of your choice, Chef Jock prefers creamy roasted pepper dressing.

Place the greens on two plates, divide the shrimp and place over the greens. Serve with your choice of dressing.
