Shrimp Ouzo (ooh-zoh)

10 large shrimp
2 cups spinach
3 tbs butter
1/4 cup ouzo (greek liqueur, found at any package store)
1/2 tbs chopped parsley
salt and pepper to taste

Melt 2 tbs butter in a saute' pan and add shrimp, cook for 2-3 minutes. Add spinach and spices, cooking 2-3 minutes more. Add ouzo and 1 tbs butter, 1/4 cup shrimp stock or veggie stock. Reduce by 1/4.
