Ingredients: whole red onion (hollowed out) 4 ounces stir-fry sliced roast beef 1/4 cup beef stock 1 tbs shallots 1 1/2 tbs butter 2 tbs parsley 3 tbs red wine 1 tbs AP flour salt and pepper to taste 1 tbs saute' dust 1/2 ounce Montrachet 2 tbs of onions from the hollowed onion (diced)
Preparation: Bake the hollow onion for 15-20 minutes at 350 degrees. Remove and add cheese to the center. In a saute' pan, melt butter. Add beef, onions, shallots, parsley, flour and all the seasonings. Cook for 4 minutes. De glaze with red wine and add stock. Reduce 15 %. Pour sauce over and in baked onions.
