Waffles with Fruit Topping

2 eggs, well beaten
1/2 TB vanilla (optional)
1/2 TB pecan or hazelnut flavoring (optional)
1 cup milk
3 TB oil
1 1/2 cups flour
2 tsp baking powder
2 tsp sugar
1/2 tsp salt

Mix together the eggs, milk and oil in a large bowl or pitcher. Stir in the flour, baking powder, sugar and salt. Mix until well blended. Heat the waffle iron and brush with melted shortening or oil if necessary. Pour in enough batter to just fill. Close and bake until the steam stops and the waffles are crisp, tender and brown.

Fruit Topping:
1 1/4 cup water
2 T sugar
1 1/4 cup fruit (any fruit can be used)
1/2 T corn starch
1 1/2 T strawberry liquor

Heat all ingredients together and bring to a boil. Remove from the heat and let gel. Pour over the waffles and sprinkle with powdered sugar.
