Ingredients 3 quarts vegetable stock 32 ounces squeezed whole canned tomatoes 1 whole onion, diced 2 yellow squashed, diced 1 zucchini, diced 1 can of chi-chi beans 1 can fa va beans 8 ounces of small pasta shells 1 tbs fresh garlic 1/2 TB saute' dust
Preparation place all ingredients (except pasta shells) in a vegetable stock pot on medium heat with the lid 3/4 of the way over it. Stir lightly every 15 minutes for 45 minutes. Add pasta shells, boil 10 more minutes and turn the eye off. Let the minestrone sit 1/2 hour. Add salt and pepper to taste.
