Crab Waffles with Shrimp Sauce

Basic Waffle Ingredients
2 eggs, well beaten
1/2 TB vanilla (optional)
1/2 TB pecan or hazelnut flavoring (optional)
1 cup milk
3 TB oil
1 1/2 cups flour
2 tsp baking powder
2 tsp sugar
1/2 tsp salt
1 cup pure crab meat

Preparation for Waffles
Mix together the eggs, milk and oil in a large bowl. Stir in the flour, baking powder, sugar and salt. Mix until well blended. Heat the waffle iron and brush with melted shortening, if necessary. Pour in enough batter to just fill. Close the lid and bake until the steam stops and the waffles are crisp, tender and brown.

Ingredients for Shrimp Sauce
1/2 cup diced shrimp
2 tbs butter
2 tsp saute dust
1 tsp shallots
1 tbs chopped parsley
1/4 cup white wine
3/4 cup heavy cream
salt & pepper (to taste)

Saute shrimp and shallots in butter. De-glaze with white wine. Add remainder of spices. Add heavy cream and reduce to a velvety texture. Then pour over waffles.
