Baked Swordfish Fromage

7 oz. swordfish
1 tbs butter
1 tsp saute dust
1 tsp grill dust
1 tsp shallots
1/2 tsp chopped garlic
(blend together ricotta cheese, montrachet and parsley)
1/4 cup ricotta cheese
1/2 oz. montrachet
1 tsp parsley
1 tbs Parmesan
salt & pepper (to taste)

In baking dish, place butter and add seasonings to fish. Spread the cheeses on top. Add parsley, salt and pepper. Bake at 350 degrees for 7-8 minutes. Add the garlic as a garnish.
