Cheese Ravioli

Ravioli Dough Ingredients:
4 1/2 cups flour
3 eggs
1/2 Tbs Olive oil
3/4 cup cool water

Preparation:
Prepare a well with the flour and add all the wet ingredients. Beat the eggs while drawing in flour. Divide the finished dough into 5 pieces. Let rest 30 minutes before rolling.

 

Cheese filling Ingredients:
16 oz. ricotta cheese
6 oz. parmesean cheese
6 oz. mozzarella cheese
1 tsp basil
1 Tbs saute' dust
1 Tbs chopped, dry or fresh parsley
salt and pepper to taste

Preparation:
Blend all ingredients together in a bowl. Use 1 Tbs of filling per ravioli.

 

Tomato cream sauce Ingredients:
1 cup heavy cream
1 cup pureed tomato
1/2 tsp oregano and basil
2 tsp saute' dust
1 Tbs butter
salt and pepper to taste

Preparation:
Melt butter, add all seasonings except heavy cream. Simmer for 5 minutes. Add heavy cream, stirring frequently and reduce by 20% to a velvety sauce.
