16-18 oz. Porterhouse
1 Tbs butter
2 Tbs olive oil
1/2 cup red wine
1/2 cup veal, beef or vegetable stock
1/4 cup scallions
1/4 cup mushrooms
1/4 cup onions
1 tsp grill dust and saute' dust
salt and pepper to taste

In a saute' pan, place butter, oil onions and steak. Saute' to medium-rare. Add remainder of ingredients, except for wine and stock. Saute' 2-3 minutes.

Deglaze the pan with wine and stock. Reduce to light sauce. Serve.
