Honeydew Sundae

Honeydew Sundae

1 whole honeydew melon (split in half and cleaned)
4 scoops frozen vanilla yoghurt
1 sliced banana
1/2 cup Macadamia nuts
1 cup chocolate sauce (see below)
1 cup spiced rum caramel sauce (see below)

Fill honey dew halves evenly with all ingredients.


Chocolate sauce
8 oz. dark or semi-sweet chocolate
1/4 cup cream decocoa
4 oz. heavy cream

Melt chocolate, then blend in cream decocoa and heavy cream until smooth.


Caramel sauce
8 oz. butter
12 oz. brown sugar
1 tsp vanilla
1/4 cup spiced rum

Melt butter, then whisk in brown sugar. Add other ingredients and bring to a high simmer so that the sauce becomes smooth and not gritty.
