Ingredients 1 10 to 12 ounce ribeye (3/4 to 1 inch thick) 1 tsp saute' dust 1/2 tsp grill dust 1 tsp finely chopped shallots 1 tbs butter-softened
Stuffing: 1/2 cup chopped mushrooms 1/4 cup chopped onion 1/4 cup Italian bread crumbs 1/2 tsp thyme 1 egg Salt and pepper to taste
Preparation Preheat oven to 350 degrees. Rub steak with dusts', butter and shallots. Prepare stuffing ingredients in a bowl. Slice a pocket in the steak and fill with the stuffing ingredients. Bake for 7 to 12 minutes or until desired doneness. Serve with a reduced beef stock or demiglace.
