Ingredients:
2 - 8oz filets
1 cup wilted spinach
1 cup cooked rice
1/2 cup sauteed red onion
1 tsp saute' dust (divided)
1/2 tsp grill dust
Salt and pepper to taste
Sauce:
1 tbs butter
1 tsp chopped garlic
1 cup button mushrooms (baby)
1/4 cup red wine
1/2 cup heavy cream
Salt and pepper to taste
Preparation:
Stuffing method-Saute' red onions with 1/2 tsp. saute' dust. Then at the last minute of cooking add in the spinach. Add salt and pepper to taste. Then put the cooked rice in a bowl and add in the saute' d onions and spinach and mix well.
Sauce method-Saute' mushrooms and garlic in butter. Add spices and seasonings. De glaze with red wine. Add heavy whipping cream and reduce to a velvety sauce. Serve over stuffed filets.
Method- Take 1/2 tsp saute' dust and 1/2 tsp grill dust and 1 tbs soft butter and rub on filets. Then stuff filets with stuffing mixture. Bake at 350 degrees for 7 minutes or longer to desired temperature.
