Ribeye la Italiano with Rice

12 oz ribeye (sliced into cubes or stir fry)
1/2 cup medium diced red onion
1 cup medium diced roma tomatoes
1 cup diced zucchini
2 tbs olive oil
1 tbs butter
1 tbs oregano
1 tbs chopped garlic
2 tbs chopped parsley
2 cups cooked rice (your choice)
1/2 cup beef stock
1/4 cup red wine
Salt and pepper to taste

Saute' ribeye in olive oil, butter and onions for 3-5 minutes.  Add zucchini, tomatoes and remainder of seasonings.  Add beef stock and wine.  Let simmer for 2-3 minutes and serve over rice.
