3 Ingredient Egg Muffins: Below you’ll find three options for these egg bites to help you mix up the flavors.
First you want to start with your base. In a large bowl, crack a dozen eggs, add 2 tablespoons of finely chopped onion & a little salt and pepper. Mix together and then pour into your muffin pan. Fill each hole half way.
Here are three different ideas you can add ot your base:
1. Egg with bacon & cheese
- 1/4 cup of bacon, chopped
- 1/4 cup of shredded cheese of your choice.
2. Egg with spinach, cheese and tomatoes
- fresh spinach chopped
- cherry tomatoes chopped
- 1/4 cup of cheese of your choice
3. Egg with mushrooms and bell peppers
- sliced mushrooms
- chopped red bell pepper
- fresh chopped parsley
Simply mix in the various ingredients into your egg base and bake at 350 degrees for around 20-25 minutes. ENJOY!
