Let us introduce you to these cookies that are the ultimate in peanut buttery deliciousness. They are also gloriously gluten-free. That practically makes them health food, right? (Don’t worry, we know that isn’t how it works.)
With the perfect blend of rich peanut flavor, sweetness, and a burst of saltiness, they are worth every ooey gooey calorie.
Ultimate Peanut Butter Cookies

1 cup peanut butter
¾ cup granulated sugar, divided
¼ light brown sugar
1 tsp vanilla bean paste or vanilla extract
1 large egg
1 tsp kosher or coarse sea salt
Preheat oven to 350 degrees.
Mix together peanut butter, ½ cup granulated sugar, and brown sugar. Save remaining ¼ cup granulated sugar for rolling the dough.
Add vanilla, egg, and salt. Mix until dough comes together.
Roll into 1 inch balls. Roll dough through remaining sugar to coat evenly.
Place sugar coated dough on greased or silicone lined baking sheet, about 1-inch apart. Press each ball down with fork tines to score.
Bake at 350 for 10-12 minutes. Cookies will still be soft in the middle.
